Today, I have a fairly quick recipe for you. This is a weekday, quick way to eat some spicy grilled chicken. I’m a HUGE fan of grilled chicken and make it all the time. I like to make variations on it, but sometimes I don’t have time to marinade chicken but still want to pack a punch. I use bold flavors for times like this.
Let me show you how it’s done.
First, we’ll need some boneless, skinless chicken breast. If the chicken breasts that I have are too big or thick, I’ll cut them in half lengthwise so I have two filets of chicken.
Combine one and a half teaspoons of kosher salt, 1/2 teaspoon of freshly ground black pepper, half a teaspoon of ground cumin, and a quarter teaspoon of crushed red pepper flakes. Sprinkle this mix evenly over the chicken breasts on both sides.
Either spray some non-stick cooking spray or one teaspoon of olive oil on both sides of the chicken and place on the grill. You want to cook the chicken about 7-9 minutes per side or 7-9 minutes on a two-sided electric grill (like the Cuisinart Griddler like I am using). The chicken should register 160 degrees Fahrenheit and then it’s done.
I know it’s very simple, but this is a great way to get a nice meal on the table in less than 10 minutes. Once the chicken is done, take the chicken off the grill, place it on a plate and let it rest for five minutes so the juices can redistribute.
With a side of brown rice, sautéed spinach, and a squeeze of lemon – what more could you want?
- 1.5 tsp of kosher salt
- ½ tsp freshly ground black pepper
- ½ tsp ground cumin
- ¼ tsp crushed red pepper flakes
- 1 tsp olive oil or nonstick cooking spray
- 3 boneless skinless chicken breast
- Mix the spices together in a bowl
- Sprinkle the spice mix over the chicken breasts evenly
- Heat a grill pan over medium high heat
- Drizzle oil or nonstick cooking spray over the chicken
- Cook chicken 7-9 minutes per side
- Allow chicken to rest for 5 minutes
