How is everyone doing? Today I have a delicious, healthy side dish for you. It can go with most anything that you can dream of making and is 1. easy, 2. delicious, 3. beautiful. Those are the best kinds of dishes aren’t they?
We are going to be having some roasted peppers and onions, they go perfectly as a side dish with my rotisserie chicken. Total yum.
Let me share how easy it is to make this.
First, you’ll need your cute mini peppers and onions. I am using 12 mini sweet peppers, one onion (red or white!), one minced clove of garlic, and 1 tablespoon of chopped parsley, olive oil, and salt and pepper.
Drizzle the veggies with two teaspoons of vegetable oil, season with 1/2 teaspoon of kosher salt, 1/4 teaspoon of freshly ground black pepper, and the minced garlic. Mix everything with your hands.
Place into a preheated 425 degree oven for 20 minutes (flipping halfway through).
That’s really all there is to it. I sprinkled fresh parsley over the veggies when they were done roasting. I also like a fresh spritz of lemon juice on nearly everything, so I treated myself with that too.
I need to incorporate more vegetarian dishes onto the blog. I love me some meat, but I try to not eat it all the time. My dad always used to tell us “not to make your stomach a graveyard of animals.” I know that kind of sounds morbid, but it’ll definitely keep meat eating at bay some days! It’s definitely the healthier choice most times.

- 12 mini sweet peppers, split in half
- 1 onion, cut into wedges
- ½ tsp kosher salt
- ¼ tsp black pepper
- 2 tsp olive oil
- 1 garlic clove, minced
- 1 tbsp chopped parsley
- Preheat oven to 425 degrees Fahrenheit
- Mix all ingredients onto a half sheet pan
- Place pan into oven and cook for 20 minutes, flipping vegetables halfway through
- Sprinkle with chopped parsley when it's out of the oven
