Pizza night is a pretty serious affair in my house. My husband loves to make his own pizza because quite honestly, he loves loading up on toppings. It’s his favorite part I think. He’s very careful with the placement of toppings and how much, so I thought I would share with you his proudest achievement.
This pizza is called Saleem’s Sparkle Pizza because growing up my father-in-law would tell my husband that eating vegetables would make him sparkle. It’s a very cute and clever way to get kids to eat their veggies. Maybe in this day of Elsa and Anna’s a little more sparkle wouldn’t hurt!
First, you’ll need some store-bought pizza dough. We used a garlic and herb pizza dough from Trader Joe’s and it was good. You need to let it rest at room temperature for about 20 to 30 minutes before you start stretching it. That will also be a good time to assemble the rest of your ingredients.
Saleem wants to let you know that even though this pizza is delicious, because it is full of toppings, the crust won’t hold up the weight. But that’s part of the charm.
I like to serve this with some arugula salad on the side.
