Ramadan is *almost* done folks! It’s sad, and this beautiful guest’s departure is always bittersweet.
While Ramadan is ending, Eid is beginning, and I don’t know about you guys, but Eid isn’t Eid for me without some meinche (the Pushto word for vermicelli and milk pudding).
This is a recipe for meinche for two. But you can change the quantity depending on how much you need.
First, you’ll need to buy a package of vermicelli from an Arab or Indian/Pakistani grocery store. I happened to find this brand that was pre-toasted so that helps on time.
For the rest of the ingredients you will need milk, heavy cream, sugar, a pinch of salt, green cardamom, and some chopped up pistachios for a garnish.
Top it off with some chopped pistachios. And like a good little desi girl, I have some chopped pistachios in my freezer at all time to garnish things like dessert and kashmiri chai…mmm! (So it’s not cuz I’m a good desi girl, more like a lazy desi girl)
I like to serve my meinche in individual ramekins. I tend to not make this for parties, only for Eid and I like having my own little bowl of it, and I also don’t like breaking into a big dish of it at breakfast. It never looks that nice and kind of turns out like breaking into a solid piece of yogurt.
