These days, I’m spending my time experimenting with food for my adorable one-year-old. And I came up with a recipe that she eats happily! Broccoli and Cheese Mashers.
Let me tell you how these are made.
- 4 peeled Yukon gold potatoes cut into one-inch cubes
- Kerrygold or Plugra butter (basically any really good quality butter!)
- 1/2 cup broccoli florets
- 1/4 cup shredded cheese of your choice
- cooking spray
You’ll want to place the peeled potatoes in a pot of cold water and bring it up to a boil then lower the heat to a steady simmer and cook until the potatoes are very fork tender. Throw in the broccoli florets and blanch them with the potatoes for 2 minutes.
I then strain the entire mixture and pick out the broccoli florets. I used a food mill to mash my potatoes very smooth but you can use a masher or a hand blender as well. I seasoned the potatoes very lightly with salt, black pepper, and butter.
And now is where you can get fun with the add-ins. For this batch, I chopped up the broccoli florets into very small pieces and added cheese. Taste the final mixture to make sure its just right! But try not to eat it all. It’s incredibly tasty!
Next, I formed one tablespoon balls of the mixture and placed it on a baking tray that I had lightly sprayed with cooking spray. I sprayed the tops of all the potato balls and then baked them in the oven for 10-15 minutes at 375 or until they were very lightly golden brown. I wanted to set the skin on the outside just a bit.
I kept the mashers on the tray and popped the whole thing into the freezer and flash froze them for 30 minutes then bagged them up. Whenever my daughter wants food I pull these out as a quick side and throw it into the microwave for 1 minute. I let them cool before giving them to her. 🙂
